Amygdalota

Amygdalota are traditional Greek almond cookies with a pale, delicately crisp exterior and a soft, chewy, marzipan-like center. Made with almond flour, whipped egg whites, superfine sugar, and almond extract, they have a rich almond flavor and gentle sweetness. The cookies are piped into decorative shapes, topped with slivered almonds, and baked until golden on the bottom while remaining light in color on top.
