Ma’amoul

A rich, date-filled cookie inspired by traditional Middle Eastern ma’amoul, made with a simple all-purpose flour dough enriched with ghee and just a small amount of sugar for gentle sweetness. The dough is scented with rose water and brought together into a soft, sturdy shortbread-style cookie with a rich, buttery depth.

The filling is made from pure Medjool dates or smooth date paste, with no added sugar, allowing the natural caramel-like flavor of the dates to shine. These cookies are hand-shaped, giving them a rustic, homemade look and a satisfying, slightly crumbly bite—simple, honest, and naturally sweet.
