The Art of Casado: A Costa Rican Classic

Before moving to San Diego in 2015, my family and I left Canada and found a true new home for a year in the enchanting town of Nosara, Costa Rica, in 2014. Nestled just a five-minute walk from the ocean, our rented property featured a main house, a guest house, and a pool surrounded by lush jungle. Each morning, we woke to the chorus of howler monkeys and the occasional giant iguana wandering across our roof. It was a place where the wildness of nature met the calm of the sea — a rhythm and pace that touched our hearts deeply.
Our days followed the pulse of this beautiful land. Shane attended a Montessori school in the jungle, and every three months, we would set out on a memorable journey in our trusty 25-year-old Hyundai Galloper — which we had bought in San Jose — driving into Nicaragua for a brief, but enjoyable stay, to renew our visas, allowing us to remain in paradise for another three months.
During this magical time, we fell in love with the rich simplicity of Costa Rican cuisine, especially Casado — a meal whose name means “married,” symbolizing the harmonious union of nourishing flavors on one plate.
This week, I will feature this very dish — just as we experienced it — one that still lives close to my heart:
• Pollo a la Plancha – Tender grilled chicken thighs marinated in citrus and traditional Costa Rican spices, offering lean protein, zinc, and immune-supporting nutrients.
• White Rice + Black Beans – Served side by side, as is typical in Casado, this daily pairing provides plant-based protein, fiber, iron, and steady energy.
• Sweet Fried Plantains – Golden, caramelized slices that bring natural sweetness, potassium, and vitamin C.
• Fresh Salad – Crisp lettuce, juicy tomato, and sharp onion, lightly dressed for a refreshing hit of antioxidants and hydration.
In Costa Rica, Casado isn’t reserved for special occasions — it’s everyday food. A nourishing, satisfying, and colorful plate you’ll find in small Sodas (local eateries) across the country. It reflects a way of eating grounded in balance, freshness, and deep gratitude — the very essence of the national spirit known as Pura Vida.
More than just a greeting, Pura Vida — “Pure Life” — captures a spirit of joyful simplicity, everyday gratitude, and meaningful connection through shared meals. Casado is Pura Vida on a plate — and I’m so happy to share it with you this week.
