There’s something deeply nourishing about the food of Mexico — not just in flavor, but in spirit. I’ve traveled there many times, and each visit leaves a lasting imprint: the generosity of the people, the vibrancy of the land, the way a meal can feel like both celebration and comfort. Mexican food has a way of being bold yet balanced, rich yet restorative — and this week’s offering at Ragna’s Table is a reflection of that.

Pozole Verde is a dish rooted in tradition — a gently simmered soup made with slow-cooked chicken, hominy, and a bright green broth that gets its color from tomatillos, pumpkin seeds, and fresh herbs. While often associated with celebration, pozole also makes a deeply comforting everyday meal. This version is not spicy, but full of flavor — earthy, tangy, and nourishing to the core.

It begins with a housemade bone broth, slowly simmered for hours with a whole chicken to draw out collagen, minerals, and rich depth. This kind of broth supports the immune system, soothes the gut lining, and provides joint-supporting collagen, making it a true wellness foundation. The hominy — nixtamalized corn — brings a chewy, satisfying texture while offering dietary fiber to support digestion and sustained energy through its complex carbohydrates. Nixtamalization also enhances the availability of niacin (vitamin B3), essential for metabolism and skin health.

The bright green broth, made from tomatillos and pumpkin seeds, adds antioxidants, vitamin C, and healthy fats — all helping to reduce inflammation and support heart health. Fresh herbs bring a vibrant boost of vitamins and phytochemicals, rounding out the soup with layers of natural nourishment.
